I had an awesome day with giles and his family today. I went over after meeting my dear cousins that I haven't seen like, in ages. Apparently my youngest cousin is wearing some lazy-eye specs and when I first saw her, I thought she was playing with specs so I did some really retarded stuff.

Me: Eh.? You wear specs one meh.?
Cherlyn: Yes.
Me: Are you sure.? *doubt - after all she's pri 1 and when I was a kid, I had a dumb dream to wear specs to look like grownups*
Cherlyn: Yes I'm sure.!
Me: Oh wait, it must be fake ones. *takes them off and puts them on and realises that its foggy*
Me: Eh its real.! Don't anyhow play with specs ok.? Later you'll get a degree.! Lets go down(:

*Both went down the stairs*

Me: Nich.! Does Cherlyn wear specs.?
Nich: Er yeah.
Me: WHAT.!? I THOUGHT SHE WAS PLAYING WITH SPECS SO I TOOK IT OFF.... *holds up specs*
Nich and Cheryl: *laughs*

Embarrassing): Apparently my cousin has the lazy eye so she has to wear it. I hope she won't end up having goldfish eyes like mine): After all, she's kinda cute:D

Anyway, after that my dad dropped me off and I took a bus over to giles' place. I actually kinda got off the wrong stop and all but I made it anyway muhahaha>=) See, girls are not THAT bad with directions ok :x

Had really good chicken rice for lunch and later we had Ichiban for dinner muhahhaa.! During that in-between period giles was doing work so I did some HOMEWORK *winks* and played with his hands, feet etc to distract him :x But I didn't mean it.! My hands crawled without my knowledge okay :D

I really had so much fun today I can't even describe it. Yes, I definitely felt A SENSE OF SATISFACTION *winks* for being able to mingle with giles' family MUCH BETTER now instead of being all shy and retarded and for once, I feel like I'm really REALLY accepted into the family as one of them and I really love the feeling(: Their family just gives me.. warmth. I love it(: Thank you giles AND gunbound ( surprised.? ) for letting me find you:D

Perhaps this is what completes someone. A partner and acceptance from the partner's family(:

Anyway, big project coming up on top of my own this saturday:D Gillian's birthday is on sunday so I've decided to bake some stuff for her:D Of course, I won't be baking at home anymore due to my ______ [ insert suitable adjective here ] mother.

Here's the recipe, so that everyone else can share it AND I wouldn't have to bring around notebooks and all while working on it:D

CHOCOLATE CHEESECAKE

1 pound of bittersweet or semisweet chocolate, chopped. (HEY piggy, you have this:D)
1/4 cup of unsalted butter
2 tbs of unsweetened cocoa (I have I think!)
24 ounces cream cheese, soften (yaya that phil... one, which means.. 3 packs of it)
1 cup sugar
4 large eggs
pinch salt
1/2 cups sour cream, room temp (sour cream:D)
2 teaspoons vanilla (I HAVE. EXPIRES THIS DECEMBER)

CRUST

PULSE: 9 ounce package chocolate wafers in food processor till fine. Add 6 tablespoons melted unsalted butter and process until blended. Press in botton of 9-inch springform pan. Bake in middle of 350F over for 8mins. Leave oven on. Cool on rack.

( I don't quite understand this. Especially on the 9 ounce package choc. wafers so I'm gonna list the ingred that they didnt )

Ingred. for Crust
1 packet of chocolate wafers
6 tbs of melted unsalted butter

Oh that's IT lol.! Alrights:D

FILLING
have a roasting pan ready and put kettle of water on to boil.
Er, it doesn't even say what or why it's needed..

MELT [OH]
chocolate and butter according to directions on the introductory card, whisk in cocoa.
So... it'll be to melt 1 pound of bittersweet or semisweet chocolate chopped PLUS 1/4 unsalted butter then whisk in the unsweetened cocoa.

BEAT
cream cheese and sugar with an electric mixer on low speed, slowly increase to medium-high, and beat until fluffy. Add eggs one at a time. Beat in salt and chocolate. Beat in sour cream and vanilla.

I just realised, if we want to do this at giles' place, I HAVE TO BRING THE MIXER OVER OMG.

POUR
into prepared springform; wrap outside with foil. Set in roasting pan, place in oven and carefully pour in ehough water to reach halfway up the sides of the springform pan. Bake 45 mins; center will still jiggle. Cool in water bath 15mins. Transfer to a wire rack to cool. Refrigerate, loosely covered, at least 12 hrs.

Oh and it serves 12, it says.

I don't understand this. You pour the filling inside and wrap outside with foil yes. But why must you pour water inside the springform pan.? Won't the crust like, be ruined.? Or is it another pan.?


Okay:D One recipe analysed and another one more to go.! I hope this one is easier for me to understand...

ICE CREAM CAKE.

You'll need:
1/4 c.cocoa, (c.cocoa.?)
1 1/4 powdered sugar
5 eggs
1 tsp vanilla
1/4 tsp salt
1 qt good vanilla ice cream

Preheat oven to 350 Deg.
Sift cocoa and sugar together.
Seperate the eggs; put the yolks and vanilla in a large bowl and treat very well until thick.
( what does treat very well mean.? )
On another bowl, whisk the egg whites until foamy; add salt and continue treating till soft peaks are formed.
( so treat should be whisking.! What are soft peaks? )
Fold the cocoa and sugar into the whites, then gently fold 1/3 of the egg white mixture into the breaten yolks.
Thoroughly butter a 10^11X15^11 cookie sheet and line it with wax paper.
( WTH IS THIS. BUY BUY BUY )
Spread the batter evenly in the pan bake 18-20 mins, until knife comes out clean.
Sprinkle a clean tea towel with powdered sugar and turn cake out onto it.
Remove wax paper and trim off any crispy edges.
Roll the cake in the towel from the long end up and let it rest for 1-2mins.
Unroll and let it rest again for a few mins then roll it up again and allow it to cool completely.
Set ice cream out to soften.
Unroll the cooled cake; spread evenly with ice crean and roll it back up ( without the tea towel )

Dust the top with powdered sugar. Keep it in the freezer till ready to serve.
When ready, cut the cake and serve it with the hot fudge sauce on the side.

HOT FUDGE SAUCE
3 tbsp unsalted butter
4 oz unsweetened chocolate
2/3 c boiling water
1 1/2 c sugar
7 tbsp corn syrup
1 tsp vanilla

Melt the butter and chocolate in a heavy saucepan oven low heat; add boiling water and stin well. ( huh, am I reading the word wrong? )
Mix in the sugar and corn syrup till sauce is smooth.
Boil the sauce, without stirring, for 10 mins; remove from heat ; cool 20 mins then add thevanilla.
Spoon the sauce oven the ice cream cake and serve.

Okay... Now I understand why ice cream cakes are so expensive):
